Welcome to Low-Cost Meals!

These are tough economic times and I've found that one of the best ways to save money is in meal planning. Cutting the grocery bill is easier than cutting the mortgage, rent, electric, phone, etc. I'll share with you the recipes I've been using to help out my family. Some are from my mom's recipe holder and they bring back memories of my childhood, and others I've found along the way. Please feel free to share any recipes you may have.


4 Bean Salad

This low-cost recipe (probably from the 1970's) uses basic ingredients that you probably already have in your cupboards (sugar, vinegar, oil), along with vegetables that you can change to what you currently have available and what you like. It's an old recipe from my childhood that mom had in her recipe holder.

1/4 c. water
1 c. sugar
3/4 c. vinegar
1/2 c. salad oil

1 green pepper, diced
1 lg. Bermuda onion
1 can (16 oz) green French Style beans
1 can (16 oz) baby lima beans
1 can (16 oz) yellow cut beans
1 can (16 oz) kidney beans

Mix first four ingredients together. Pour over vegetables and chill.
